Warty exterior and an oblong shape fruit with thin layer of flesh surrounding a central seed cavity filled with large, flat seeds and pith.
crunchy when sliced.
Intensely bitter sweet but tolerable.
Tender, crunchy and watery in texture

Bitter gourd is generally consumed cooked in the green or early yellowing stage. It may be stir-fried with meat and soy/oyster sauce, or with eggs and diced tomato. Can be mix with other vegetables.
